Got bored and wanted to work on D&D, decided to do math. These are calculated at 4th level for 6th level characters who take leadership. All they need to do is pick names and two feats.
GRIFFON
As a 4th level Barbarian:
HP 4d12+12 (38 hp) AC 17 (+6 nat., -1 size, +2 Dex)
Speed: 30 ft., Fly 80 ft.
Saves: Fort +7, Ref +3, Will +2
Stats: Str 18, Dex 15, Con 16, Int 6, Wis 12, Cha 6
Skills: Intimidate +1, Listen +5, Move Silently +5, Spot +9, & Survival +4
Attacks: +7 bite 2d6+4, +2 claws 1d4+2
Special: Battle hardened, darkvision 60 ft., fast healing 1, low-light vision, pounce, rage (+2d6;+10 ft.;DR 4/-), rakes 1d6+2, scent
For higher level characters:
Large Beast
Speed: 30 ft., Fly 80 ft.
Stats: Str+2, Dex+2, Con+2, Int-4, Wis+0, Cha-2
Skills: Jump +4, Spot +4
Attacks: Bite 2d6, Claws 1d4, Rake 1d6
Special Actions: Pounce, rake
Special Qualities: Darkvision, low-light vision, nat. armor +6, scent
PEGASUS
As a 4th level Monk
HP 4d8+12 (30 hp) AC 18 (+6 armor, +3/2 nat., -1 size, +2 Dex)
Speed: 60 ft., Fly 120 ft.
Saves: Fort +7, Ref +6, Will +5
Stats: Str 18, Dex 15, Con 16, Int 10, Wis 12, Cha 12
Skills: Listen +12, Move Silently +9, Sense Motive +8, Spot +12
Attacks: +7 slam 2d6+6
Special: Armored in life, darkvision 60 ft., detect evil 60ft., detect good 60ft., diamond soul 9, fatal strike, low-light vision, rain of flowers, scent
*Swift Ghost Charge: +30 ft. movement, moving does not provoke AoO
*Way of the Horsefeathers: concealment, +4 dodge to saves
For higher level characters:

At higher levels you need a flying mount, so to create some that aren't weak I used the Monsters as Characters section in Frank & K's Tome pdf to determine ability modifiers for the griffon, hippogriff, and pegasus and plugged them into classes that seemed appropriate.

I follow ya, but those races are far better than normal. So I guess you should be using conversion method 3 (which made the monsters hand out HD instead of having classes) or make actual monster classes (I tried it, BTW, though I'm fairly sure we should be talking about medium BAB).
