Actually it'd be the chocolate chocolate with a side of chocolate. Yes, that was intentional.

And yeah, this version is so a person can easily say they're making just tea, or nothing but cakes, or alternately actual powders and potions and acid things as well as philosopher's stones and shit.

Okay, the first version (with cakes and tea and requirements for recipes) is complete - all recipes written up.

The second version (with lists of effects, and you roll/invent the flavour) is still in the works.

The Mana Infusions... how many can a Mana Alchemist have active at one time? One? One per mana type? Limited by time only?

You can have as many going at a time as you like, but any item can only hold one mana at a time. So basically yes, you can infuse mana into your gear, and also everyone else's.

Sure. I would have used one of the lead characters from Atelier Iris 1 or 2, but that works too.
