That's what you would use instead of a lamb shank. So if the question was "What's a good vegan alternative to shanking a racist?" the answer would be "Beet the racist."

The vegan alternative to the egg is an avocado pit.

The last time I heard shanking used as a verb it was slang for attempting to commit murder with a knife. So the idea of a vegan alternative briefly confused me.

Surely that ambiguity is the joke? Admittedly would work better if you were saying "beet/beat" out loud.
