So stuff evolves from other stuff to suit new environments like going from water to dry land to being able to regulate body temperature without sunbathing all the time.

So then, at what point would a mammal thing stop being a mammal and be as different from a mammal as a mammal is to a reptile?

When someone picks a bunch of arbitrary distinctions between one subset of mammals and another subset of mammals and then a bunch of other people agree that those arbitrary distinctions are exactly the right kind of arbitrary distinctions to be making and they come up with a new name and make everyone learn it so their better-educated friends don't call them stupid.

Well, current understanding of evolution is cladistics. Speciation is where evolution starts and various branches have traits, but you can trace those traits back to where they aro--

Taxonomy is the study of human classifications of animals, not the animals themselves. Something stops being a mammal and starts being something else when human taxonomists declare it to be so.
