*not that all entries are for one setting, but each can be a setting to its own. So you could also write about post apocalytpic humans that ride giant beetles and so on.

Dwellers of a Primordial Land of Nothing But Bugs

Pets: Big peacock spiders, which are fuzzy for cuddles, come in cute colors, and do fun dances.
Livestock: Dairy aphids (herded by domesticated ladybugs, and sometimes stolen by wild ants), kosher locusts, silkworms. Honeypot ants can't be kept, but the formic community is intelligent enough (in aggregate) to recognize services rendered to their kind; in payment for such services, they may send a honeypot to be taken as tribute.
Mount: Giant house centipedes, bred for speed and tracking.
Platforms: Giant scarabs with small holes bored through their elytra, so the riders can fire from cover.
Flying Mount: Dragonflies for most people; Protagonists earn the friendship of the Bumblebee Queen and get to ride with retinues of her swarm. The evil raider tribe lives in a terrifying hive of poorly-tamed giant wasps.
Super Beast: Giant scorpions and praying mantises. A mantis shrimp may make a surprise appearance during a sea-side setpiece.

Kenku/Crow Tengu/winged crag and tree-top dwellers

Pets: carrion crows, monkeys, and other creatures that are intelligent and capable of sustained vertical movement
Livestock: Beetles, honeybees goats, rams, mountain sheep
Mount: None - due to having wings, they have developed more towards a network of outposts as common resting points along frequently used routes.
Platforms: Giant beetles, dire rams, or thermal airships - used primarily as a temporary outpost for the purposes of raiding or expansion
Super Beast: Roc

Ancient Mesopotamia Dwarves

Pets: Hyena
Livestock: Chicken, goat, pigs, bees
Mount: Dire Camels
Platform: Giant Ant-Lions

Note: The Frozen Jungle is exactly what it sounds like, a Tropical jungle located in an arctic tundra (or possibly located in the tropics but frozen magically). Every plant and animal in The Frozen Jungle is magically resistant to cold, thanks to experiments from the insane wizard that created it.
