If minions are really a problem there is probably a way to bullrush/overrun/trample the minions to get to the real target. Also, if a Summoner could go ethereal with a ghost touch weapon they could sail through most minions and attack as normal.

I've never used planar binding in a real game, isn't it possible to cast it more than once per day? If you could get 5 active castings at once you'd only need 1 wish per summon. I don't think there'd be many real MCs that would let you do that, but it could work by RAW.

EDIT: A game's SGT will depend entirely on what expectations you, the designers and the players have. Generally we expect a level appropriate character to be able to handle level appropriate challenges. It also depends a lot on the game itself, like what genre it is, does it use levels, etc.
