For the Wii, I'd definitely recommend New Super Bros. Wii. If you can stomach the bad writing and unskippable cutscenes, Metroid: Other M plays pretty well (rent it first if you get the chance). Skyward Sword looks amazing, but I haven't played through most of it yet. I'm not much of a fan of Mario Kart Wii; I'd rather play Double Dash or pick up Mario kart 64 on the virtual console.
Other than Mario Kart: Double Dash!!, I'd definitely pick up Pikmin 2 if you get the chance. There's no time limit, so you can take a day or two to build up your forces or just wander around whenever you feel like without fear of game over. Both multiplayer modes (PvP capture the flag and co-op challenges) are a lot of fun, though they can be frustrating when there's a skill gap between players.
Custom Robo is like Bomberman with missiles and a jetpack. It's quite fast-paced, and there are many, many viable mech builds depending on your playstyle. I haven't played much of the multiplayer, but the single-player campaign has some challenging battles and lasts a fair few hours. Half the fun is losing a match, learning from your mistakes, and customizing your robot for the challenge at hand.
Sonic Adventure 2 is one of my favourite games for the Gamecube, but from your stated preferences I don't think you'd like it. I also had fun with Sonic Heroes. Sonic Adventure DX wasn't that great, but the feel of it was closer to the Genesis games than the other two.
I've occasionally been working my way through Yugioh: The Falsebound Kingdom. There are no card games. On the main map, you command your characters and upgrade buildings in real time. When a battle occurs, you take control of a team of up to three monsters in a turn-based battle. However, it's a really tough game. The mission I got stuck on in Kaiba's campaign has you attacked by something like nine opponents so fast that you can't spam the more money cheat fast enough to heal your teams, and one of your best defensive commanders is missing and/or brainwashed.
